Local Food At Home

​MU student and food enthusiast Joel Dalton cooks a delicious Cuban meal with local ingredients from​ the Root Cellar.

  • 1 onion, diced
  • 1 tomato, diced
  • 1 green bell pepper, seeded, diced
  • 2 chorizos (Spanish-style sausage) cut into   1" pieces
  • 4 ounces Canadian bacon/Ham, diced
  • 2 cans garbanzo beans (Chickpeas)
  • 1-15 ounce can tomato sauce
  • 3 small-medium potatoes, peeled, cut into small cubes
  • salt to taste
  • olive oil

What You Need:

How You Do It:

Heat oil in a large pot over medium heat. Add onion, tomato, and green bell pepper, cook until onions are translucent.  Add the 2-cans of garbanzo beans(chickpeas) with their liquid. Add tomato sauce, potato. Reduce the heat and simmer for 45 minutes.


When 10 minutes are left on the soup, put olive oil, chorizo, and Canadian bacon/Ham in a separate pan, and fry for 5 to 7 minutes, or until the Canadian bacon/Ham has turned red. Add the meat when necessary.



Serve with a lime slice and toast if desired. Bon appetit!
